Over 23 years ago, my son was diagnosed with Celiac. It was a scary time for our family as there were very few resources available. We wanted to know where to buy products and how to cook so that my son would grow up healthy. The hardest thing to do was bake for my son; nothing tasted good to him. We gave up making bread and cakes and just bought the products that he liked. I remember the breads did not taste good and always broke apart by the time he had lunch in school. What a disappointed child!
Years went by and my son went off to Towson University, graduated and returned home. This time I was very eager to provide him with bread that would not crumble, get dry or have no taste. Thus, I brought out the mixer and bought all the different Gluten free flours that are on the market today and started baking. After a year of experimenting we came up with the best Gluten free combination that provided the best ever GLUTEN FREE PITA BREAD!
The goal was to make a product that would be tasty, edible and enjoyable. We wanted our son to be pleased with the product and enjoy it.
